- Stir the Dressing ingredients (coconut milk, lime juice, sugar) together in a cup until sugar dissolves.
- Place all fresh fruit in a mixing bowl. Pour the dressing over the fruit and toss well to mix.
- Pour or scoop the fruit salad into a serving bowl or into a carved-out pineapple. For instructions, see: how to make a pineapple boat.
- Garnish just before serving with a star fruit slice.
- Refrigerate if you are not serving immediately.
- To keep starfruit from going brown after slicing, simply drizzle it with some fresh lime or lemon juice.
